Joe's Italian Mac and cheese recipe with fresh ricotta and fresh mozzarella

Ingredients:

Joe's Italian Mac and cheese recipe with fresh ricotta and fresh mozzarella

1 lb pasta ( tri colored "spiral" pasta)
1/2 lb Fresh Ricotta
1/2 lb fresh mozzarella
2 tablespoons butter
Salt and Pepper
1/2 cup Parmigiano Reggiano
1/4 Italian bread crumbs


Instructions:

Simple Instructions to Italian Mac and cheese

Cook pasta in salted water until "el dente". Drain pasta and add butter, ricotta, mozzarella, salt and pepper. Cover (off heat) for 5 minutes. Stir and transfer to a casserole tray. Top with Parmigiano and bread crumbs. Cover and place in oven on broil for 6-8 minutes or until golden brown.

So when I was a kid Sundays were all about watching football. Wait who am I kidding? Sundays are still a huge part of my life. Back to my childhood; most of the time one of my aunts or my mom or Grandmom would cook something amazing on Sunday so that at halftime during the first game around 2:30pm eastern standard time we would feast. However occasionally I was left to my own and had to cook for myself, so I paid special attention to a few select recipes. Easy recipes. This Mac and cheese was and still is one of my favorites. A true guilty pleasure, it's rich, hearty, highly caloric and filling, not to mention absolutely delicious! So next Sunday you now have something to try, something even a cooking novice or a kid could master.
